A rich, hearty black bean soup

Ingredients


Aromatics


¼ cup diced carrot


¼ cup diced red onion


¼ cup diced celery


1 tablespoon garlic paste (or 2 cloves, minced)


Beans & Liquid


3 cans black beans (about 15–16 oz each), divided


3–3½ cups chicken stock

(use vegetable stock for vegetarian)



Seasonings


1 teaspoon red pepper flakes (optional)


1 teaspoon dried oregano


1 teaspoon paprika


1–1½ teaspoons ground cumin


1 tablespoon fresh lime juice


Kosher salt, to taste


Black pepper, optional


Herbs & Finish


2 teaspoons fresh cilantro, chopped (divided)


Fresh lime wedges (for finishing)


Diced red onion (for garnish)


Sour cream (optional topping)

Method

1. Build the First Layer


Heat a heavy-bottomed pot or Dutch oven over medium-high heat.


Add olive oil, then carrots, onion, and celery.


Season lightly with kosher salt and black pepper.


Cook until vegetables release their moisture, soften, and become lightly golden.


2. Add Garlic & Toast the Spices


Lower heat to a gentle simmer.


Add garlic paste and cook briefly until fragrant.


Stir in red pepper flakes, oregano, paprika, and cumin.


Add 1 tablespoon lime juice and let everything toast gently for depth.


3. Slow Simmer the Base


Reduce heat to low and let aromatics simmer for about 10 minutes, allowing flavors to fully develop and roast gently.


4. Add the Beans


Add 2 cans of black beans (with their liquid).


Stir well to coat beans in the aromatic base.


5. Add Stock & First Cilantro


Pour in 3–3½ cups chicken stock.


Add 1 teaspoon chopped cilantro.


Bring to a gentle simmer.


Taste and season with additional kosher salt as needed.


6. The Pro-Chef Trick (Game Changer)


Purée the third can of black beans in a food processor until smooth.


Stir the purée directly into the pot.


This naturally thickens the soup and deepens flavor—no blending hot soup, no mess.


7. Final Simmer


Simmer on low for another 10–15 minutes until soup is thick, glossy, and cohesive.

Taste again and adjust seasoning.


8. Serve & Finish


Ladle into bowls.


Top with diced red onion, remaining cilantro, a squeeze of fresh lime juice, and a small dollop of sour cream if desired.


Chef Brian’s Notes


The puréed-bean method creates creaminess without dairy and keeps the soup low-glycemic and filling.


Lime is added twice for balance: once for brightness during cooking, once fresh for contrast.


This soup gets even better the next day.
