Roasted Potatoes

Ingredients

Potatoes

  • 1 pound red potatoes, cut into quarters

  • 2 quarts water

  • 2 tablespoons kosher salt

  • 1 teaspoon baking soda

Pre-Roast Coating

  • 3 tablespoons extra virgin olive oil

  • 1 teaspoon lemon juice

  • Pinch red pepper flakes

Final Garlic Herb Finish

  • 1 tablespoon extra virgin olive oil

  • 4 tablespoons unsalted butter

  • 1 teaspoon garlic paste
    (or 2 cloves fresh garlic minced)

  • Kosher salt

  • Black pepper

  • Fresh parsley

  • Fresh thyme

  • Fresh rosemary

  • Small squeeze fresh lemon juice

Optional:

  • Parmesan cheese

Instructions

Step 1 — Boil the Potatoes

Bring water to a boil.

Add:

  • kosher salt

  • baking soda

Then add potatoes.

Boil until just fork tender:
⏱ About 10 minutes

Do NOT overcook.

👉 The baking soda creates alkaline water which breaks down the outside of the potato faster than the inside. This is the secret to that crispy crust.

Step 2 — Build the Starch Layer

In a large bowl combine:

  • olive oil

  • lemon juice

  • red pepper flakes

Drain potatoes directly into bowl.

Now toss aggressively.

👉 You WANT the potatoes to look rough and cloudy.

That loose starch becomes the crispy crust later.

Step 3 — Roast

Preheat oven:

  • 450°F regular oven

  • 400°F convection

Spread potatoes on sheet pan.

Roast:

  • 20 minutes

  • flip

  • another 20 minutes

Until deep golden brown and crispy.

This final sauté takes them from good…

Step 4 — Garlic Herb Butter Finish

In sauté pan add:

  • 1 tablespoon olive oil

  • 4 tablespoons unsalted butter

  • garlic paste

Heat until fragrant.

Add roasted potatoes.

Season with:

  • salt

  • pepper

  • parsley

  • thyme

  • rosemary

Toss together until coated.

Turn heat OFF.

Finish with:

  • squeeze lemon juice

Optional:

  • parmesan cheese
